The business premises will also include a shop for direct sales, as well as a warehouse and storage area. “There is another room, approximately 300 square meters large, which will become a versatile area. There, we will be able to host tasting sessions, meetings between producers and consumers, conferences, and workshops”.

Butéga Valtellina’s core objectives are promoting local raw materials and convey the uniqueness of the Valley through its dishes. To do so, the chefs who own restaurants located along popular tourist itineraries were involved in this project. Tirano is the only place in Italy where the red Bernina Express train stops, for instance. “Fully understanding the value of local products is not simply a matter of technical skills” explains Giorgio. “What really makes the difference is the will to manage business always adhering to the values at the heart of our culture. To value and promote products and their processing even better, we selected some of the most innovative restaurants in the area. With them, starting in March 2020, we meant to start organising special events. Another goal we have in mind is eventually to produce “on order”, through those businesses in our network who can explore and start new cultures. We are, indeed, deeply convinced that restaurant owners are a strategic link in the chain between producers and final consumers”.

The Bernina Express
Since 2008, the Bernina Express has been in the UNESCO World Heritage List. The train covers 122 km on the Rhaetian Railway, between Italy and Switzerland. Its breathtaking route reaches an altitude of 2,253 metres.
UNESCO, the United Nations Educational, Scientific and Cultural Organization, was conquered not only by the magnificent structures – bridges and viaducts – the train runs on, but also by “the use of the railway to overcome the isolation of settlements in the Central Alps early in the 20th century, with a major and lasting socio-economic impact on life in the mountains”.
